Yuzu Black – Japanese Black Tea with Bright Citrus

Yuzu Black was our first Japanese black tea, made with the smooth Benifūki cultivar and fragrant yuzu rind grown in Shizuoka, Japan. The tea base is soft, silky, and exceptionally smooth, giving the bright citrus character of yuzu plenty of room to shine. Yuzu is aromatic, tart, and complex, with a flavor that sits somewhere between lemon, mandarin, and grapefruit. In this blend, the rind brings a lively citrus aroma along with a pleasant pithy bitterness, much like the way citrus zest adds depth to food.

Refreshing and layered, Yuzu Black is delicious hot or iced. The cup is smooth and citrus-forward, with very low astringency and a clean finish that lingers.

Flavor Profile

Smooth and lightly sweet with silky body, bright yuzu citrus, subtle pithy bitterness, and very low astringency.

Ingredients

Japanese Black Tea (from the Benifuki cultivar), Yuzu Citrus Fruit Peel. Both ingredients grown by Konishi-san, a small tea farmer in Shizuoka, Japan.

Brewing Instructions

8 oz Cup

  1. Scoop a level teaspoon of tea into infuser.
  2. Heat water to 185° F.
  3. Pour 8 oz. of water over tea leaves.
  4. Steep tea for 3-5 minutes (depending on taste preference).
  5. Remove infuser and enjoy tea.

Potful

Simply add to your infuser one level teaspoon of leaf per 8 oz. of water and place it in your pot, then add the appropriate amount of 185° F water and let it steep for 3 to 5 minutes. Remove the infuser and enjoy.

Brewing Iced Tea

Our opinion is that a cooled concentrate works best, as regular-strength brew tends to become watery as the ice melts. So, use the above leaf quantities, but half the water, allow it to cool, then pour it over ice and enjoy! The brew will dilute down to proper strength as the ice melts.
