This vibrant, velvety green tea doesn’t just happen overnight. In fact, it’s one of the most carefully crafted teas in the world. In the final 4–8 weeks before harvest, the tea plants are shaded to boost their chlorophyll and amino acid content. This shading is what gives matcha its signature color and deep umami flavor. Thefirst harvest (ichibancha)only happens once a year, and after the leaves are picked and dried, they’reslowly ground into powder—one ounce can take up to an hour to produce!
